Yesterday I hung out with my friend Allison, who is is in town from Switzerland. I watched her whip up a whole bunch of amazing food from scratch– that post will be up soon, I hope. After I returned to my abode, she chatted me on Facebook: “Can we come and drop off some pumpkin- chocolate chip cookies for you and your family?”
Can you ever! You had me at pumpkin.
These cookies were so light and fluffy, they don’t even really fit their name. They’re more like… clouds. Seriously.
Allison is a very healthy baker (and has skillz), so she modified this recipe (which ALSO looks really good).
In her words: “I halved the amount of butter, left out the walnuts, added less chocolate chips (really, it’s to your liking), didn’t frost them, and used 1 teaspoon of Trader Joe’s pumpkin pie spice and 1 teaspoon of cinnamon. It makes sooo many cookies, I scooped out the rest of the dough and froze it, so it probably makes around 4 dozen cookies with one recipe. Enjoy!!!”
And the chocolate chips were still oozy. Bliss. (Although apparently they’re better the 2nd day… I’m about to test that, but I’ll probably give them a little microwave-zapping for warmy-ness.)
In life we are too often ambushed by unfortunate news or events. So it’s nice from time to time to get unexpectedly cookie-bombed.
